This is the first recipe of pickles we tossed into the world! And WOW, what a hit! The recipe was designed to preserve the seasonal farmers’ market veggies and fresh herbs and is now a favorite pantry staple. So the veggie selection included may vary slightly.  We use white wine/champagne vinegar for its neutral flavor and ability to marry into the brine, elevating the flavors of the individual vegetables. The whole spices with fresh thyme and bay leaves makes these pickles highly addictive!

Pairs perfectly with grilled cheese or garnishing smoked salmon on toast
